This Grilled Havarti with Onion Jam is the tastiest sandwich and pairs well with a chilled glass of Gallo’s Cafe Zinfandel.

Taking time out to enjoy the simple things in life is what can make a so-so day turn into something as fantastic as National Grilled Cheese Day.

The grilled cheese sandwich is considered one of the top comforts foods in the United States. It’s loved so much that it has its very own day of honor — April 12. The simplicity of just a few ingredients like gooey melted cheese and bread paired with your favorite glass of wine is what I am talking about.

Did you know that grilled cheese originated in the 1920’s? It was served open-faced, purely because it was inexpensive. It wasn’t until the 1960’s did someone decide to top it off with another slice of bread.

Now you really need to pay attention to this little bit of advice. Ditch the butter and use mayo. You will achieve the best results when using mayo. You can thank me later. Trust me on this and follow this method. Set the burner to medium heat because it prevents the bread from burning and allows sufficient time for heat to thoroughly insulate the bread. A crispy golden-brown crust with a melted cheese center. Get creative with your favorite toppings and try out all different types of cheese.

I chose Havarti, a Danish semi soft cheese. It has a buttery aroma, tastes somewhat sweet, and is slightly acidic. I add a touch of class by including this onion jam that I made a few days ago. The jam adds an additional depth of sweetness. Gallo’s Cafe Zinfindel is a perfect pairing with this sandwich. This wine is a fantastic alternative to traditional Zinfandel wines because it’s refreshing, smoother, and lighter. Café Zinfandel sparkles with strawberry, raspberry and watermelon flavors and can be served chilled.

Sunday is usually the one day of the week that I let the hubby decide what we will have for lunch. But when I told him that we were having grilled cheese and wine he was quite pleased. Like I said, it’s the simple things in life that put that smile on your face. Trust me on this, the secret definitely is the mayo. The thick Texas Toast bread combined with the jam is what kicks this grilled cheese sandwich up a notch.

The classic way to create a grilled cheese is usually cheddar. However, it’s definitely fun to try out other varieties of cheese as well. Taking classic dishes and reinventing them, can take ordinary and turn it into extraordinary. It really doesn’t get any easier than that.

Heat a frying pan with griddle lines add about 1 teaspoon avocado oil. In the meantime, spread mayo on each slice of bread. When the pan in hot enough place one slice of bread mayo side up in the pan just long enough to crisp the bread. Turn the bread over, mayo side down, add the cheese and let it melt a bit. Add the second slice to the pan, mayo side up just to crisp the bread. Place onion jam on top of the cheese. Place the toasted slice on top of the onion jam and flip. close lid until cheese melts completely. 3.2.2925
