Ingredients

  • 1/2 c. Extra virgin olive oil
  • 1/4 c. Lemon juice
  • 2 Tbsp. Minced chives or possibly chopped shallots
  • 1 Tbsp. Dijon mustard
  • 1 x Chopped clove garlic
  • 1/2 tsp Salt
  • 12 sm New potatoes partially cooked
  • 2 med Summer squash halved and sliced vertically within 1/2 inch of top
  • 2 x Yellow/green peppers halved seeded and sliced in vertical strips
  • 1 lrg Onion cut into 1/2 to 3/4 inch thick slices
  • 4 x Halibut, (6-ounce each) steaks or possibly other fish steaks

Directions

  1. Combine oil, lemon juice, chives, mustard, garlic and salt in small mixing bowl; blend well. Arrange vegetables on grill about 5 min before fish; baste frquently. Arraneg fish on grill; cook 5 min per side or possibly about 10 min per inch of thickness, basting frequently.
