Grilled Garlic Lime Pork Chops

This is a super simple recipe and the combination of flavors is fantastic. We served it with a flavorful quinoa dish. We were tempted to put the sauces on the pork as we were grilling it, but we stuck with the recipe. It turned out wonderfully, and it enabled two of our less venturesome kids to enjoy the salt & pepper pork without the sauce. Ingredients

  • 1/4 cup fresh lime juice
  • 2 garlic cloves, minced
  • 1/4 teaspoon dried hot red-pepper flakes
  • 1/4 teaspoon salt
  • 1/3 cup extra-virgin olive oil
  • 3 tablespoons chopped fresh cilantro
  • 6 (1/2-inch-thick) boneless pork chops

Directions

  1. Stir together lime juice, garlic, red-pepper flakes, and 1/4 teaspoon salt, then add oil in a slow stream, whisking well. Stir in the cilantro.
  2. Preheat your grill to medium-high heat. Pound the pork chops if necessary to get them to 1/2 inch thick, then pat pork dry and season liberally with salt and pepper. Oil grill rack or spray oil directly on the chops, then grill pork chops, covered, turning over once, until just cooked through, 6 to 7 minutes total. Serve drizzled with some vinaigrette, and with remainder on the side.
