Grilled Chicken Thighs with Oyster Barbecue Sauce; on the road to Morocco Recipe
by Katie Zeller

These are similar to the Chicken Wings that mon mari loves.

We didn’t marinate the thighs, just basted them the sauce, like we would for regular barbecued chicken.

And, of course, we saved half the sauce for dipping.

Grilled Chicken Thighs with Oyster Barbecue Sauce

Total time: 40 minutes

Ingredients:

Instructions:

Oyster Barbecue Sauce:

Combine all ingredients for sauce and whisk well.

Divide – halt for basting, half for dipping.

Rub thighs with oil and sprinkle with salt and pepper.

Cook thighs on barbecue grill for 25 minutes, turning once or twice.

Start basting after 10 minutes and baste 2 – 3 times. They’ll be done when they are nicely browned and the juices run clear when pierced with a knife.

Serve with remaining barbecue sauce on the side.

Summer, when I was a child, was the time for family reunions.

We normally went to at least 3: my father’s family on his father’s side, my mother’s family on her father’s side and my mother’s family on her mother’s side.

I’m not sure if those descriptions are understandable, but that’s how she described them and she kept all the relationships, for our very large extended family, straight.

The reunions were always held in the park on a Sunday and they were always pot-luck. Everyone sat on blankets eating off of paper plates and catching up on a year’s worth of news.

We kids ran around, renewing our fleeting, summer friendships and trying to avoid parental interference.

Do families in the Midwest still have those types of gatherings in the summer?

Do they still have Kool-Aid for the kids? Does Kool-Aid still exist?

This fall we’re having a family reunion…. In Morocco.

We’ve lived here for almost 20 years and have never been across the Mediterranean.

That’s about to change.

This all started at the turn of the century. You remember the big deal about the millennium and the fear that the world, or, at least, the computer world, was coming to an end?

We decided to celebrate the change of the century…..

So we rented a castle in the middle of Spain for our clan to gather and toast the new everything.

We’re a small group, basically mon mari’s siblings, spouses, children, partners, and whoever else fits at the time. We’re usually around a dozen adults, sometimes more, sometimes less.

Five years later we did it again, in France this time, with a few days in Paris, a few days in the country and a few days chez nous.

Five years after that we rented a small, converted hotel / restaurant in Italy.

This time we’ve rented a small riad in Marrakesh with the help of my friend, Kate who writes Mosaic Road.

She’s given us all sorts of suggestions for wonderful things to do in and around Marrakesh.

Jealous?

Who’s been to Morocco?

Did you love it?
