Grilled Asparagus, Tomato, And Carrot Salad

Ingredients

  • 2 bn asparagus
  • 5 x scallion
  • 3 x carrot, minced into matchstick pcs
  • 12 x cherry tomato Marinade
  • 1/4 c. extra virgin olive oil
  • 1/4 c. balsamic vinegar
  • 1 tsp minced garlic
  • 1 pch salt
  • 1 pch pepper Vinaigrette
  • 1 c. extra virgin olive oil
  • 1/4 c. vinegar
  • 3 Tbsp. lowfat sour cream
  • 1 Tbsp. horseradish
  • 1 Tbsp. minced garlic
  • 2 Tbsp. finely minced savory
  • 1/2 tsp cumin
  • 1 dsh Worcestershire sauce
  • 1 tsp lime, juice
  • 1 dsh salt
  • 1 dsh pepper

Directions

  1. Snap the bottom section off the asparagus stalks at their natural break point.
  2. Chop the remaining tops into thirds.
  3. Remove bottoms from scallions and place in a large mixing bowl with the asparagus pcs.
  4. Marinade:Add in marinade ingredients to bowl and toss well.
  5. Grill lightly over medium high heat for two to three min, so they still have crunch.
  6. Remove from grill to cold and chop scallions into small pcs.
  7. Vinaigrette:In a separate salad bowl, mix all ingredients of vinaigrette and whisk for 15 seconds.
  8. Add in grilled asparagus and scallions.
  9. Add in carrot pcs and cherry tomatoes that have been cut in half.
  10. Mix gently by hand till all elements are coated, cover and chill till serving.
