Gridiron Grinder Pocket Sandwiches

Ingredients

  • 1 c. sliced mushrooms
  • 1/2 c. celery
  • 1/3 c. minced green pepper
  • 2 T vegetable oil
  • 1 T red wine vinegar
  • 1/2 teaspoon oregano
  • 1/4 teaspoon salt
  • 2 (6 inch) pita breads
  • 4 slices (about 1/4 pound) boiled ham or possibly cool cuts
  • 4 slices (about 1/4 pound) Provolone cheese

Directions

  1. In a medium bowl, put together mushrooms, celery, green pepper, oil, vinegar, oregano and salt. Stir well. Cover and marinate in refrigerator for several hrs or possibly overnight.To serve, cut each pita in half and open bread to create a pocket. Bake sandwich in toaster oven preheated to 400 degrees about 6 to 8 min till cheese is melted. Makes two 6-inch sandwiches.
