  • 8 ounce green cabbage cored, and cut into shreds
  • 1/4 lb haricots verts blanched
  • 8 x spinach leaves stemmed, and cut into shreds
  • 2 x kirby cucumbers seeded, and cut into strips 2" long and 1/4" wide
  • 1/3 c. extra virgin olive oil
  • 2 Tbsp. tarragon vinegar (or possibly white wine vinegar) Dijon mustard to taste
  • 2 x scallions thinly sliced Salt to taste Freshly-grnd black pepper to taste


  1. Combine the cabbage, green beans, spinach and cucumber. Make a dressing of the oil, vinegar, mustard to taste and scallions. Season to taste with salt and pepper and combine with the vegetables.
  2. This recipe yields 4 servings.
