  • 1 c. Parsley sprigs l/3 c. grated Parmesan cheese
  • 1 1/2 c. Large curd creamed cottage cheese
  • 1 Tbsp. Lemon juice
  • 1 Tbsp. Lowfat milk
  • 1/2 tsp Dry basil leaves
  • 1/2 tsp Salt
  • 1/8 tsp Pepper
  • 4 dsh Red pepper sauce
  • 2 x Cloves garlic, crushed
  • 1 pkt (9 ounces) fresh cheese-filled Tortellini
  • 1 c. Cut-up cooked chicken

Directions

  1. Starting with Tortellini from the refrigerated food section of your grocery store makes preparing this salad extra easy.
  2. Place all ingredients except Tortellini and chicken in blender. Cover and blend on high speed about 3 min, stopping blender occasionally to scrape sides, till smooth. Cover and chill at least 2 hrs but no longer than 24 hrs.
  3. Cook the Tortellini as directed on package; drain. Toss with green sauce and chicken.
  4. 4 servings.
