Green Tea “Matcha” Madeleines Recipe

Ingredients

  • 10 tablespoons unsalted butter
  • 1 tablespoon plus 3/4 cup all purpose flour
  • 1/4 cup cake flour
  • 1 ½ to 2 teaspoons (to your taste) green tea (culinary grade) “matcha” powder
  • generous pinch of kosher salt
  • 3 large eggs, at room temperature
  • 2/3 cup granulated sugar
  • 1 teaspoon vanilla extract
  • Confectioner’s sugar, to dust cookies (optional)
  • Special equipment: Madeleine baking tray
