Directions

  1. Boil cut-up peppers till tender. Save juice.
  2. In buttered casserole, layer with peppers, cheese, butter and cracker crumbs (repeat). Beat 2 Large eggs with 1/2 c. pepper juice. Pour egg mix over pepper layers.
  3. Cook, uncovered, at 375 degrees for 30 to 45 min till browned.
