Ingredients
2 (10 ounce.) Packages frzn baby peas
3 carrots, peeled & shredded
2/3 c. thinly sliced scallions with tops
1/2 c. minced parsley
1/4 c. minced mint
1/2 c. fruity extra virgin olive oil
8 tbsp. red wine vinegar
1 teaspoon salt (optional)
1/2 teaspoon pepper
Directions
Combine vegetables, parsley and mint.
Whisk together extra virgin olive oil, vinegar, salt and pepper.
Toss together, refrigerateand serve cool. Serves 8 to 10.
