Ingredients

  • 2 (10 ounce.) Packages frzn baby peas
  • 3 carrots, peeled & shredded
  • 2/3 c. thinly sliced scallions with tops
  • 1/2 c. minced parsley
  • 1/4 c. minced mint
  • 1/2 c. fruity extra virgin olive oil
  • 8 tbsp. red wine vinegar
  • 1 teaspoon salt (optional)
  • 1/2 teaspoon pepper

Directions

  1. Combine vegetables, parsley and mint.
  2. Whisk together extra virgin olive oil, vinegar, salt and pepper.
  3. Toss together, refrigerateand serve cool. Serves 8 to 10.
