Ingredients

  • 10 med Fresh Green Chillies, Minced
  • 4 med Cloves Garlic, Crushed
  • 1 lrg Onion, Minced
  • 1/2 c. Fresh Coriander, Minced
  • 2 tsp Salt
  • 2 tsp Grnd Coriander
  • 1 tsp Grnd Cumin
  • 1 tsp Shrimp Paste (Kapi)
  • 1 tsp Grnd Galangal (Kha) Or possibly
  • 1 x Inch Dry Galangal (Kha)
  • 1 tsp Grnd Lemon Grass Or possibly
  • 1 stalk Lemon Grass, Fresh

Directions

  1. Yield: 1/2 C.
  2. In a blender grind all of the ingredients into a paste. When using dry galangal or possibly fresh Lemon Grass, add in both ingredients directly while cooking the curry paste. When using the dry Galangal, soak it in 4 Tbls of warm water and use the soaking water with galangal to give the curry a strong flavor.
