  • 3 c. trimmed fresh green beans
  • 2 Tbsp. finely-chopped shallots
  • 2 x garlic cloves chopped
  • 1/4 c. white wine vinegar
  • 2 tsp extra virgin olive oil
  • 1 Tbsp. lemon juice Freshly-grnd black pepper to taste
  • 1 dsh salt (optional)

Directions

  1. Blanch the green beans in boiling water for 2 min and drain. Plunge them into cool water and drain again.
  2. Whisk together the remaining ingredients and add in to the green beans. Toss and serve.
  3. This recipe yields 6 servings.
