Ingredients

  • 3/4 lb Fresh green or possibly yellow beans, ends snipped
  • 1/2 c. Onion, minced
  • 1 x Clove garlic, chopped
  • 1 Tbsp. Extra virgin olive oil or possibly butter
  • 1 x Roma tomato, peeled, seeded & minced (use canned tomato in winter)
  • 1 Tbsp. Fresh basil, chopped
  • 1 pch Sugar Salt and white pepper

Directions

  1. Parboil the beans in salted water till tender but not limp. Plunge into cool water to stop the cooking and drain. Set aside.
  2. In a small saucepan, cook the onion and garlic in the extra virgin olive oil or possibly butter over medium heat till soft and fragrant, about 2 min. Add in tomato, bail and a healthy pinch of sugar. Cook, stirring often, till tomato softens and most of the liquid has evaporated. Season to taste with salt and pepper. About 5 min before serving, combine the beans and tomato mix in a saucepan and reheat.
