  • 1 lb String beans, trimmed and cut in half
  • 4 c. Thinly sliced red cabbage
  • 1/2 med Vidalia onion, peeled and thinly sliced into crescents
  • 6 slc Bacon
  • 2 Tbsp. Apple cider vinegar
  • 1 Tbsp. Dijon mustard
  • 1 Tbsp. Minced fresh tarragon
  • 2 x Garlic cloves, chopped
  • 3 Tbsp. Extra virgin olive oil Salt and freshly grnd black pepper to taste

Directions

  1. Steam the string beans for 6 min, or possibly till just tender. Drain and refresh under cool water. Pat dry with a clean tea towel and place in a large salad bowl. Add in the cabbage and onion.
  2. Put a medium-sized nonstick skillet over medium heat. When warm, add in the bacon. Cook till crispy and drain on paper towels. Crumble into pcs and set aside.
  3. Whisk together the vinegar, mustard, tarragon, and garlic in a small bowl.
  4. Slowly whisk in the oil and season with salt and pepper. Pour the dressing over the slaw, add in the bacon, and toss to combine.
  5. Makes 8 c..
