Ingredients

  • 1 tsp Extra virgin olive oil
  • 5 x Garlic cloves, chopped
  • 3 can (28 ounce.) whole tomatoes, liquid removed and coarsely minced
  • 1/2 c. Minced fresh parsley, divided
  • 1 1/4 lb Large shrimp, peeled and deveined
  • 1 c. Crumbled feta cheese
  • 2 Tbsp. Fresh lemon juice (i just used one whole lemon, didn't measure)
  • 1/4 tsp Freshly grnd pepper

Directions

  1. Now which we have all these tips on cleaning shrimp, here is a yummy way to cook them! It is from the 1997 Cooking Light Annual recipes. We had it for dinner tonight and really liked it.
  2. Preheat oven to 400. Heat oil in a large dutch oven over medium heat till warm. Add in garlic; saute/fry 30 seconds. Add in tomatoes and 1/4 c. of the minced parsley; reduce heat and simmer uncovered for 10 min. Add in shrimp and cook 5 min. Pour mix into a 13x9 inch baking pan; sprinkle with feta cheese. Bake at 400 for 10 min. Sprinkle with remaining parsley, lemon juice and pepper.
  3. Serves 6.
  4. Note: I also added about 8 minced Kalamata olive along with the shrimp.
