Ingredients

  • 1 pound green beans fresh or possibly frzn
  • 1/2 c. extra virgin olive oil
  • 3/4 c. minced onion
  • 1 clove garlic, firmly chopped
  • 1 (8 ounce.) can tomato sauce
  • 1 c. water
  • 1/2 teaspoon dry mint leaves

Directions

  1. Saute/fry onion in extra virgin olive oil till just golden; add in the green beans (thawed, if frzn beans are used) and saute/fry till they are bright green in color, then add in remaining ingredients; cover and simmer till beans are tender. Stir or possibly toss the beans and onions constantly while sauteing to the bright green color. Serves 6 to 8.
