Ingredients

  • 2 pound fish (red snapper or possibly any thick white fish)
  • 5 or possibly 6 onions, sliced
  • 4 or possibly 5 potatoes, sliced circular
  • 1 can crushed stewed tomatoes, including juice
  • 1/4 c. extra virgin olive oil
  • 4 bay leaves
  • 4 garlic cloves, sliced thin
  • 1 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tbsp. paprika
  • 4 tbsp. wine vinegar
  • 2 tbsp. tomato paste, diluted with 1/2 glass water
  • Lemon slices for garnish on fish

Directions

  1. Wash fish and season with a little salt, pepper and dash of paprika; set aside.
  2. In a 10"x15" glass pan, combine sliced onions, potatoes, crushed stewed tomatoes, bay leaves, garlic, salt, black pepper and paprika. Add in diluted tomato paste. Now arrange fish in center of pan and pour extra virgin olive oil all over including fish.
  3. Bake in 350 degree oven, covered with foil for first 40 min and uncovered for an additional 45 min. Add in wine vinegar over potatoes and onions on last 15 min of cooking and lemon slices on fish. Serves 4 to 6.
