Ingredients
- 1 1/2 c. brown sugar, packed
- 1/2 c. shortening
- 2 Large eggs
- 1 pound can pumpkin
- 2 3/4 c. flour, sifted
- 1 tbsp. baking pwdr
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon salt
- 1/4 teaspoon ginger
- 1 c. raisins
- 1 c. pecans, minced
Directions
- Preheat oven to 400 degrees. Mix sugar, shortening, Large eggs and pumpkin. Thoroughly sift dry ingredients and add in to pumpkin mix. Blend well. Add in raisins and pecans. Drop batter by tsp. on ungreased baking sheets. Bake 12 to 15 min or possibly till lightly browned. Makes about 6 dozen cookies.
