%20years%20since%20I%20first%20started%20my%20blog,%20and%20this%20is%20my%20200th%20post.%20In%20someways,%20I%20consider%20this%20to%20be%20a%20huge%20solo-dance-party-worthy%20experience,%20but%20on%20the%20other%20side%20of%20the%20fence,%20it's%20a%20bit%20low.%20Just%20glance%20over%20to%20my%20side%20bar%20-%20the%20number%20of%20recipes%20per%20year%20has%20been%20slowing%20decreasing%20(67,%2072,%2041,18%E2%80%A6)%20but%20I%20consider%20to%20be%20myself%20to%20be%20a%20better%20cook.%3C/p%3E%3Cp%3ENow%20when%20I%20approach%20my%20kitchen,%20it's%20a%20little%20more%20Iron%20Chef%20and%20a%20lot%20less%20exact.%20There%20will%20never%20be%20a%20day%20in%20which%20I%20stop%20referencing%20cookbooks%20or%20other%20food%20blogs,%20but%20now%20I'm%20much%20more%20comfortable%20approaching%20a%20spread%20of%20ingredients%20with%20only%20myself%20as%20inspiration.%20Ingredients%20are%20more%20ingrained%20and%20I%20know%20how%20nicely%20they%20play%20with%20their%20food%20friends.%20Tasting%20starts%20before%20I%20even%20start%20chopping%20the%20first%20onion.%20But%20how%20does%20this%20translate%20over%20to%20a%20food%20blog?%3C/p%3E%3Cp%3EFor%20me,%20it%20doesn't.%20I%20take%20that%20back,%20it%20only%20kind%20of%20does,%20but%20it%20means%20less%20posts%20with%20more%20trust.%20Now%20when%20I%20post%20something,%20it's%20a%20recipe%20I%20have%20probably%20tried%20once%20or%20twice.%20The%20first%20time%20was%20to%20inhale%20and%20analyze%20the%20food%20without%20pressure%20of%20photography.%20Second%20is%20perfecting.%20Third%20is%20for%20the%20blog.%20Or%20in%20the%20case%20of%20this%20recipe,%20sometimes%20I%20rework%20a%20classic%20and%20put%20it%20on%20up.%3C/p%3E%3Cp%3EBack%20when%20Andy%20and%20I%20were%20back%20in%20Seattle,%20we%20made%20use%20of%20the%20first%20few%20catches%20of%20a%20salmon%20run%20but%20curing%20King%20Salmon%20with%20Aquavit.%20In%20my%20opinion,%20there%20is%20no%20better%20way%20to%20experience%20Pacific%20salmon%20then%20cured%20and%20on%20a%20slice%20of%20hearty%20rye%20bread.%20Cut%20to%20six%20months%20later,%20and%20while%20we%20are%20away%20from%20my%20beloved%20Pacific%20ocean,%20it's%20just%20as%20easy%20to%20find%20fresh%20and%20sustainable%20salmon%20on%20the%20Third%20Coast%20in%20Wisconsin.%3C/p%3E%3Cp%3EThe%20basics%20of%20curing%20are%20simple%20and%20similar%20to%20my%20last%20recipe,%20but%20this%20time%20we%20cut%20out%20the%20Auqavit%20and%20upped%20the%20amount%20of%20sugar%20and%20salt.%20As%20far%20as%20meat%20goes,%20I%20recommend%20approaching%20the%20fish%20monger%20of%20your%20local%20food%20coop%20and%20having%20him%20select,%20cut%20and%20remove%20the%20bones%20of%20the%20best%20possible%20cut%20of%20fish.%3C/p%3E%3Cp%3EGravlaks%20with%20Sweet%20Mustard%20Sauce%3C/p%3E%3Cp%3EFrom%20the%20Kitchen%20of%20Light%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3ETwo%203-point%20salmon%20fillets,%20skin%20on,%20any%20pinbones%20removed%3C/p%3E%3Cp%3E%E2%85%93%20cup%20salt%3C/p%3E%3Cp%3E%E2%85%94%20cups%20sugar%3C/p%3E%3Cp%3E1%20tablespoon%20coarsely%20ground%20black%20pepper%3C/p%3E%3Cp%3E3%20tablespoons%20fine%20chopped%20fresh%20dill%3C/p%3E%3Cp%3E1%20teaspoon%20dill%20seeds%3C/p%3E%3Cp%3ESweet%20Mustard%20Sauce%20(recipe%20below)%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3ERinse%20fillets%20in%20cold%20water%20and%20pat%20them%20dry%20with%20paper%20towels.%20Combine%20the%20salt%20and%20sugar,%20and%20rub%20the%20flesh%20side%20down%20in%20a%20deep%20dish%20just%20big%20enough%20to%20hold%20the%20fillets%20(we%20used%20a%20large%20glass%20roasting%20pan).%3C/p%3E%3Cp%3EScatter%20the%20pepper,%20fresh%20dil,%20and%20dill%20seeds%20over%20it.%20Place%20the%20other%20fillet%20skin-side-up%20on%20top.%20Cover%20the%20dish%20with%20plastic%20wrap%20and%20place%20a%20heavy%20weight%20(such%20as%20a%20cast%20iron%20skillet%20like%20we%20did)%20on%20top%20of%20the%20fish.%3C/p%3E%3Cp%3ERefrigerate%20for%203%20to%204%20days,%20turning%20the%20fish%20every%2012%20hours%20and%20basting%20it%20with%20the%20brine%20that%20accumulates%20in%20the%20dish.%3C/p%3E%3Cp%3EOnce%20cured,%20gently%20wipe%20the%20cure%20off%20the%20top%20of%20the%20fillets.%20Use%20a%20long,%20narrow,%20flexible,%20sharp%20knife%20to%20remove%20the%20skin%20from%20each%20fillet.%20With%20the%20salmon%20skin%20side%20down,%20grab%20the%20tail%20end,%20pinching%20it%20with%20your%20thumb%20and%20fingers.%20If%20the%20skin%20is%20slippery,%20use%20a%20paper%20towel%20to%20grip%20it.%20Use%20the%20knife%20to%20slice%20between%20the%20skin%20and%20flesh.%20Keep%20the%20knife%20at%20an%20angle,%20pointed%20down%20towards%20the%20skin,%20and%20use%20a%20rocking%20motion%20to%20slice%20under%20the%20length%20of%20the%20fillet%20and%20remove%20the%20skin.%3C/p%3E%3Cp%3EOnce%20the%20skin%20is%20removed,%20flip%20the%20fillet%20over%20and%20trim%20off%20any%20pieces%20of%20skin%20still%20left%20on%20the%20fish.%20After%20the%20skin%20is%20removed%20from%20both%20fillets,%20store%20them%20in%20the%20fridge,%20well%20wrapped,%20where%20they%20will%20keep%20for%20at%20least%20a%20week.%3C/p%3E%3Cp%3ETo%20serve,%20slice%20the%20salmon%20as%20thinly%20as%20possible%20by%20using%20a%20sharp%20knife%20to%20shave%20off%20pieces,%20cutting%20towards%20the%20tail%20end.%20Wrap%20any%20unused%20salmon%20and%20return%20it%20to%20the%20fridge.%20Traditionally,%20gravlax%20is%20served%20with%20mustard-dill%20sauce%20and%20rye%20bread.%20It%E2%80%99s%20also%20delicious%20just%20sneakily%20eaten%20plain,%20too!%20Just%20don't%20tell%20Andy%20I%20do%20that%E2%80%A6.%3C/p%3E%3Cp%3ESweet%20Mustard%20Sauce%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3ECombine%20the%20sweet%20mustard%20and%202%20tablespoons%20of%20the%20Dijon%20mustard%20in%20a%20medium%20bowl.%20Add%20the%20sugar%20and%201%20tablespoon%20of%20the%20vinegar.%20Gradually%20add%20the%20oil,%20whisking%20constantly.%3C/p%3E%3Cp%3EAdjust%20the%20flavors%20as%20necessary.%3C/p%3E%3Cp%3EThe%20sauce%20should%20be%20neither%20overly%20sweet%20nor%20overly%20acidic.%20Add%20a%20little%20water%20if%20the%20sauce%20gets%20too%20thick.%20Stir%20in%20the%20chopped%20dill.%20It%20will%20keep,%20refrigerated,%20for%202%20to%203%20weeks.%3C/p%3E){kind=link}
