Directions

  1. Preheat oven to 350 degrees. In a 1-qt saucepan, combine dates, the water, and honey. Bring to a boil, reduce the heat, and simmer for 7 min. Cold for 10 min. Stir in walnuts. Reserve. In a large mixing bowl, crumble together brown sugar, butter, rolled oats, flour, and baking soda. In a small bowl, mix vanilla and lowfat milk, then stir into dry ingredients to create a crumbly mix. Pat two thirds of the crumbly mix onto the bottom of an 8-inch-square baking pan. Spread date mix onto crumbs.
  2. Sprinkle remaining crumbly mix on top. Bake till lightly browned (35 to 40 min).
