Grandma's Pumpkin Cheesecake Recipe

Ingredients

  • CRUST
  • 1 c. Graham cracker crumbs
  • 1 Tbsp. Sugar
  • 4 Tbsp. Butter, or possibly margarine, Melted FILLING
  • 16 ounce Cream cheese, softened
  • 3/4 c. Sugar
  • 16 ounce Pumpkin, 1 can
  • 1 1/4 tsp Grnd cinnamon
  • 1/2 tsp Grnd ginger
  • 1/2 tsp Grnd nutmeg
  • 1/4 tsp -salt
  • 2 x Large eggs TOPPING
  • 2 c. Lowfat sour cream
  • 2 Tbsp. Sugar
  • 1 tsp Vanilla extract Pecan halves, 12 to 16

Directions

  1. CRUST: Combine crust ingredients. Press into the bottom of a 9" spring form pan; chill.
  2. FILLING: Beat cream cheese and sugar in a large mixing bowl till well blended. Beat in pumpkin, spices and salt, add in Large eggs one at a time, beating well after each. Pour into crust and bake at 350 degrees for 50 min.
  3. TOPPING: Meanwhile, for topping, combine lowfat sour cream, sugar and vanilla. Spread over filling; return to oven for 5 min. Cold on a rack and refrigerateover night.
  4. GARNISH: each slice with a pecan half.
