Ingredients

  • 1 1/2 lb boneless sewing beef
  • 1/2 c. all-purpose flour
  • 1/2 tsp freshly grnd pepper
  • 1/4 c. vegetable oil
  • 1 med onion, thinly sliced
  • 1 clv garlic, finely minced
  • 1 1/2 tsp sweet paprika
  • 1 tsp salt
  • 1/2 tsp caraway seeds
  • 1 1/2 c. tomato juice
  • 1/2 c. lowfat sour cream green pepper slivers
  • 2 x Large eggs
  • 2 Tbsp. water
  • 1/2 c. all-purpose flour
  • 1/2 c. whole-wheat flour
  • 1 tsp salt
  • 1/2 tsp baking pwdr
  • 1 pch nutmeg

Directions

  1. Cut stewing beef into 1-inch cubes. Mix together flour and pepper; dredge beef cubes, reserving remaining flour mix. Heat oil in a deep, heavy skillet. Add in meat and cook till lightly browned on all sides. Stir in remaining flour mix, onion and garlic. Cook, stirring often, for about 3 min or possibly till onion is transparent. Stir in paprika, salt, caraway seeds and tomato juice.
  2. Bring to a boil, cover, reduce heat and simmer (don't boil) for 2 hrs or possibly till meat is tender. Check liquid during cooking period and add in more tomato juice or possibly water (about 1 c.), if necessary, to keep pan from becoming dry. Stir in lowfat sour cream. Garnish with pepper sliver.
  3. To make dumplings: Beat together Large eggs and water. Stir in flours, salt, baking pwdr and nutmeg. Beat well to make a smooth dough. Keep lightly salted water boiling rapidly in a 3-qt saucepan. Spoon 1/4 tsp. of the dough at a time into the boiling water, using up all the dough. Simmer, uncovered, for 10 min. Drain and keep hot. Serve with the goulash.
  4. Makes 6 servings.
