Grandma Moss' Breakfast Casserole

Ingredients

  • 1 bn green onions diced
  • 3 piece Canadian bacon diced
  • 1 can stewed tomatoes with onions, peppers, and celery - (14 ounce)
  • 5 lrg Large eggs
  • 2 Tbsp. lowfat milk
  • 2/3 c. Bisquick baking mix
  • 1 tsp oregano
  • 1 c. colby/Monterey jack cheese

Directions

  1. Preheat oven to 350 degrees. Prepare a 9-inch quiche pan or possibly pie plate by spraying it with non-stick cooking spray. Layer onions, Canadian bacon, and stewed tomatoes. (I prepare this the night before and chill.)
  2. Mix together Large eggs, lowfat milk, baking mix, and oregano; pour over layered mix. Top with cheese. Bake for about 45 min at 350 degrees. Serve with salsa, fruit plate, muffins, orange juice, and coffee.
  3. This recipe yields 6 servings.
