Grandma Ekarius' Cabbage Creole

Ingredients

  • 2 c. potatoes, diced
  • 2 c. cabbage, shredded
  • 1/4 c. butter
  • 1/4 c. celery, minced
  • 1/2 c. onion, minced
  • 2 tbsp. bell pepper, minced
  • 1 1/2 c. lowfat milk
  • 3 tbsp. flour
  • 1/2 c. cheese
  • 1 c. ham, diced
  • 8 to 10 crackers, crushed

Directions

  1. Boil potatoes and cabbage till done. Saute/fry butter, celery, onions, and bell pepper in separate pot. Add in lowfat milk, flour, and cheese to make sauce. Drain potatoes and cabbage and add in ham. Put into casserole and pour sauce over mix. Top with crackers. Bake 20 min at 350 degrees. Serves 6.
