Ingredients

  • 1/2 c. Margarine
  • 14 ounce Cream corn
  • 14 ounce Kernel corn liquid removed Or possibly frzn kernel corn
  • 1 c. Lowfat sour cream or possibly yogurt
  • 2 x Large eggs, beaten
  • 2 1/2 c. Biscuit mix
  • 1/4 c. Cornmeal

Directions

  1. Heat marg in pan. Spread melted marg to cover pan, then pour into a bowl.
  2. Add in remaining ingredients to bowl and blend til just mixed. Pour into pan and bake for 40 to 50 min. Test as you would cake. Serve hot as a vegetable or possibly as potato replacement
