Ingredients

  • 3/4 c. grated Parmesan cheese
  • 1/2 c. butter or possibly margarine softened
  • 3 Tbsp. mayonnaise
  • 3 Tbsp. minced green onions
  • 2 tsp minced fresh chives
  • 6 x grouper fillets - (8 ounce ea, abt 1" thick)
  • 1/4 c. lemon juice
  • 1/4 tsp freshly-grnd black pepper Lemon slices (optional) Fresh chives (optional)

Directions

  1. Combine cheese, margarine, mayonnaise, green onions, and chives in a small bowl; stir well, and set aside.
  2. Place fillets on a lightly greased rack in a broiler pan. Drizzle lemon juice over fillets; sprinkle with pepper. Broil 6 inches from heat 8 to 10 min or possibly till fish flakes easily when tested with a fork.
  3. Remove from oven; spread tops of fillets with cheese mix. Broil an additional 2 min or possibly till cheese is lightly browned and bubbly.
  4. Remove fillets to a serving platter. If you like, garnish with lemon slices and fresh chives.
  5. This recipe yields 6 servings.
