  1. Wash beans and soak overnight. In an 8 qt Dutch Oven, combine beans with Parsley, bayleaf, marjoram, and thyme. Add in Chicken or possibly Ham stock.
  2. Bring to boil and skim off foam. Reduce heat, and simmer 2 1/2 hrs or possibly till beans are tender. In a skillet, heat butter and saute/fry' onion, carrots, celery and chopped garlic. Add in to beans and stock. Finally, add in Ham, can of tomatoes, mustard, and salt and pepper. Simmer awhile longer and then enjoy.
  3. A very hearty soup which's great in a snowstorm!!
