Such a great twist on traditional garlic bread. If you like a lot of filling, you can double the recipe. Double makes enough for a large loaf of french bread and half a batard.

Ingredients
- 1/4 cup butter, room temp
- 1/2 cup Gorgonzola cheese, room temp
- 1 T minced garlic
- parsley-- I used about 1 T freeze dried
- salt
- pepper
- fresh grated Parmesan cheese
- 1 loaf of good rustic bread
Directions
- Cream together the butter and Gorgonzola. If they're soft enough you can do it by hand, if not use a mixer or food processor.
- Mix in the garlic and parsley.
- Stir in salt and pepper. If you're using salted butter, taste your mixture before adding more, you might not need any.
- Slice your bread about 3/4 of the way through into sections.
- Hold open the slices and spread the mixture evenly between them.
- Top with grated Parmesan.
- Wrap in foil and heat in a 400 degree oven for about 10 to 15 minutes until everything is melted and gooey.
