Ingredients

  • Jersey Heirloom Tomato Jam:
  • 5 lbs. of ripe heirloom tomatoes (I used the bruised and mushy ones, instead of tossing them), skins left on, cut into pieces
  • 1 large red onion, cut into pieces
  • 1 3/4 - 2 cups of brown sugar
  • 2 tbsp of good balsamic vinegar
  • 1 tbsp of mustard seeds
  • 1 lemon, sliced thin, seeds removed
  • 1 cinnamon stick
  • dried chili pepper flakes, to taste
  • 1 tsp sea salt
  • 1 tsp garam masala or a few whole cloves
  • a few sprigs of fresh thyme
