Ingredients

  • 3/4 c. butter, melted
  • 1 c. molasses
  • 1/2 c. honey
  • 1 c. buttermilk or possibly thick sour lowfat milk
  • 5 c. flour (can be all white or possibly a mix of white and whole wheat)
  • 3 heaping tbsp. each wheat germ, dry lowfat milk, soy flour
  • 1/2 teaspoon salt
  • 2 teaspoon ginger
  • 4 teaspoon baking pwdr
  • 3/4 teaspoon baking soda
  • 1 tbsp. lemon juice

Directions

  1. Mix melted butter, molasses and honey till smooth. Add in buttermilk, flours, salt, ginger, baking pwdr and soda, dry lowfat milk and wheat germ. Add in lemon juice. Mix to smooth stiff dough. Roll out on lightly floured surface to 1/4 to 1/3 inch thick dough. Cut into shapes. Bake at 350 degrees for 10 min on ungreased cookie sheets.
  2. To Decorate: We use cinnamon hearts or possibly raisins for buttons and eyes before baking.
