  1. In 2 qt saucepan, cook onion in butter till tender, about 3 min. Blend in flour, salt, pepper, and nutmeg. Gradually stir in lowfat milk, broth, squash, and parsley. Cook and stir till mix comes to a boil. Serve immediately. Garnish with parsley and sprinkle with nutmeg, if you like. Makes 4 servings.
