Golabki (Polish Stuffed Cabbage)

Ingredients

  • 1 med Stuffed cabbage
  • 1 c. Rice
  • 2 1/2 c. Water
  • 1 lrg Onion, chopped
  • 3 Tbsp. Butter or possibly margarine
  • 1 lb Grnd beef, or possibly 1/2 lb. grnd beef and 1/2 lb. grnd veal or possibly pork
  • 1 x Egg
  • 1 tsp Salt
  • 1/4 tsp Pepper
  • 1 x Garlic clove, finely minced, (optional)
  • 1 can (15-ounce) tomato sauce

Directions

  1. Polish/Ukrainian
  2. Remove core from cabbage. Place in a pot of boiling water to cover and cook for 10-15 min. Drain, cold and seperate leaves. Trim down thick stem on each leaf.
  3. Bring 1 1/2 c. of water to a boil and add in rice. Over medium heat, cook rice for 5 min, or possibly till it has absorbed all the water. Set aside.
  4. Saute/fry chopped onion in 3 Tbsp. butter or possibly margarine. Combine the meat, rice, onion, egg, salt, pepper and garlic. Mix thoroughly.
  5. Preheat oven to 375 degrees.
  6. Place about 3 heaping Tbsp. of meat ans rice filling on each leaf.
  7. Roll the leaf, tucking sides either inside or possibly under. Repeat with remaining leaves.
  8. Place the cabbage rolls close together in a baking dish or possibly Dutch oven. Pour the tomato sauce, that has beem mixed with 1 c. water, over the rolls.
  9. Cover and bake in the oven for 1 1/4 hrs.
  10. Yield: 4 servings
