  • 4 large, ripe bananas with green tips
  • 1/3 cup plain or gluten-free flour
  • 1 cup polenta, medium-grind
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon sea salt
  • 3 large eggs, separated
  • 1/3 cup superfine sugar
  • 1/2 teaspoon pure vanilla extract
  • 1/4 cup plus 2 tablespoons skim or soy milk
  • 1/4 cup vegetable or corn oil
