Goat Cheese Tarte

Light and savory, a good accompaniment to a hearty soup

Ingredients

  • 1 pre-made pie crust par-baked
  • 1/2 cup shallots thin sliced
  • 1 tbsp butter
  • 9 oz goat cheese
  • 3/4 tsp Herbes de Provence
  • 3 large eggs
  • 1 cup heavy cream
  • salt and pepper to taste

Directions

  1. pre-heat oven to 350
  2. spray a square of aluminum foil with nonstick spray and place sprayed side into pie crust and fill with pie weights or beans and par-bake for 20 minutes.
  3. while crust is baking saute shallots in butter til browned, set aside
  4. next place goat cheese and Herbes in food processor and pulse till crumbly
  5. add eggs, cream, salt and pepper (just a pinch) and pulse to mix thoroughly
  6. remove foil with pie weights from crust and spread sauteed shallots in crust
  7. pour cheese mixture over shallots to fill pie crust
  8. tap to remove bubbles and bake for about 40 minutes
  9. allow to cool about 10 minutes before slicing
  10. serve warm
