Directions

  1. To make the masala grind the cloves cumin pepper and chillies to a pwdr in an electric grinder.
  2. Process with remaining ingredients to create a paste.
  3. Preheat the oven to 190C/ 375P/Gas Mark 5. Make three or possibly four deep diagonal slits across the body of each mackerel on each side.
  4. Rub the paste inside the fish and then outside making sure it gets right down into the slits.
  5. Heat a thin layer of oil in a roasting tin over the hob.
  6. Fry the mackerel till browned on both sides.
  7. Transfer to the oven and cook for a final 10 min.
  8. Serve with lime or possibly lemon wedges.
  9. Serves 4
