Directions

  1. Remove skin from chicken pcs; place chicken in shallow dish.
  2. Combine soy sauce, lemon juice, oil, lemon pepper, ginger, 1 c. water and garlic; pour over chicken. Cover and chill for at least 8 hrs or possibly up to 24 hrs turning occasionally.
  3. Sprinkle rice proportionately in bottom of 12-c. greased casserole; arrange chicken pcs over rice. Pour in marinade. Cover and bake in 325F 160C oven for 40 min. Uncover; bake for 30-40 min or possibly till chicken is no longer pink inside.
  4. Garnish with lemon rind.
  5. You can substitute 2 lb chicken legs for the chicken; bake in a 13x9-inch baking dish. Lemon pepper can be found in most spice sections of supermarkets.
