Ingredients

  • 1/2 lb bulk sausage, any flavor
  • 1/2 x onion, minced
  • 1 x tomato, minced
  • 1 1/2 c. evaporated lowfat milk
  • 1 x refrigerated pie crust
  • 1 c. Cheddar cheese, grated
  • 3 x Large eggs

Directions

  1. Preheat oven to 425 degrees. Brown crumbled sausage, drain and cold.
  2. Prepare pie crust according to package directions, place in a 9-inch pie pan and flute edges. Mix meat and onion and spoon into crust. Top with minced tomato, then cover with cheese. Beat Large eggs, add in lowfat milk and beat till well blended. Pour carefully into pie to just below pie rim (it may not take all the egg mix). Cover exposed crust rim with foil. Bake 15 min. Reduce heat to 325 degrees and bake 30 - 35 min longer till knife inserted in center comes out clean. Remove foil 10 min before done. Serve with a tossed salad, Bloody Marys and go-team-go!
