Go Coconutty For Goan Coconut Rice Recipe

Ingredients

  • 1 and 1/4 cups of Basmati rice
  • 6 green cardamom pods
  • 5 whole cloves
  • 1 onion finely chopped
  • 2 Tbs coconut or other vegetable oil
  • 1 Tbs grated dried unsweetened coconut
  • 3 Tbs chopped fresh cilantro
  • 1 tsp of salt
  • 1 cup of coconut milk
  • 1 and 3/4 cups of water...(or you can make this rice as I did using all coconut milk)
  • 1 cinnamon stick
