%20I%20miss%20the%20warm,%20sweet%20fruit%20with%20a%20spoonful%20of%20cool%20vanilla%20ice%20cream.%3C/p%3E%3Cp%3ESo%20as%20I%20was%20cooking%20lunch%20for%20my%20mom%20this%20past%20Friday,%20I%20noticed%20a%20bowl%20full%20of%20fresh,%20South%20Carolina%20peaches%20in%20their%20fridge.%20They%20had%20visited%20my%20hometown%20earlier%20that%20week%20and%20picked%20some%20up%20during%20their%20trip.%20And%20as%20I%20roasted%20carrots%20for%20our%20main%20course,%20I%20started%20thinking%20of%20a%20recipe,%20and%20thank%20goodness%20it%20was%20a%20success!!%3C/p%3E%3Cp%3EYou%E2%80%99ll%20need:%3C/p%3E%3Cp%3ERemove%20the%20skin%20from%20two%20peaches%20and%20cut%20into%20chunks.%20Heat%20the%20butter%20in%20a%20saut%C3%A9%20pan%20on%20medium%20heat.%20Melt%20the%20butter%20slowly,%20so%20that%20it%20froths.%20Add%20in%20the%20peach%20chunks.%20Stir%20well.%20Let%20the%20peaches%20cook%20slowly%20for%20about%205%20minutes,%20then%20add%20in%20the%20brown%20sugar%20and%20cinnamon.%20I%20used%20about%201/2%20tsp.%20of%20cinnamon,%20but%20you%20can%20add%20it%20to%20taste.%20Stirring%20frequently,%20let%20the%20mixture%20cook%20and%20caramelize%20until%20the%20peaches%20are%20tender.%3C/p%3E%3Cp%3EServe%20warm%20with%20a%20scoop%20of%20vanilla%20ice%20cream.%20Enjoy%20immediately!!!%3C/p%3E%3Cp%3ESimply%20delicious!!%3C/p%3E%3Cp%3EUPDATE:%20This%20morning%20I%20used%20the%20same%20technique%20as%20these%20oats,%20but%20I%20substituted%20peaches.%20The%20peaches%20did%20fluff%20a%20bit,%20but%20they%20didn%E2%80%99t%20disintegrate%20like%20the%20strawberries.%20At%20the%20end%20I%20added%20one%20tbsp.%20of%20butter,%20a%20sprinkle%20of%20cinnamon,%20and%20one%20tbsp.%20of%20brown%20sugar.%20SO%20GOOD!!%3C/p%3E){kind=link}
