Yesterday was a great day at work! Full…busy…BUT great! I had the seedling class, then a new Gluten Free battered fish demo (Henry & Lisa’s). Thank goodness I had a volunteer come early to help set up the demo. I usually have everything prepared before they arrive, but yesterday I needed an extra pair of hands, because then I had a wine reception starting at 1pm. My co-op unveiled our new private label wine “Fly the Coop”, and I had sent out almost 300 invitations on Monday to our beer & wine lovers!! Everything was a great success, and when I got home from work yesterday I was ready to start the weekend!
I made a quick cocktail of sparkling water, blueberries, and a splash of sweetened tea. Refreshing!

.%20Thank%20goodness%20I%20had%20a%20volunteer%20come%20early%20to%20help%20set%20up%20the%20demo.%20I%20usually%20have%20everything%20prepared%20before%20they%20arrive,%20but%20yesterday%20I%20needed%20an%20extra%20pair%20of%20hands,%20because%20then%20I%20had%20a%20wine%20reception%20starting%20at%201pm.%20My%20co-op%20unveiled%20our%20new%20private%20label%20wine%20%E2%80%9CFly%20the%20Coop%E2%80%9D,%20and%20I%20had%20sent%20out%20almost%20300%20invitations%20on%20Monday%20to%20our%20beer%20&%20wine%20lovers!!%20%20Everything%20was%20a%20great%20success,%20and%20when%20I%20got%20home%20from%20work%20yesterday%20I%20was%20ready%20to%20start%20the%20weekend!%3C/p%3E%3Cp%3EI%20made%20a%20quick%20cocktail%20of%20sparkling%20water,%20blueberries,%20and%20a%20splash%20of%20sweetened%20tea.%20Refreshing!%3C/p%3E%3Cp%3EBlueberries%20in%20sparkling%20water%20are%20the%20star%20of%20this%20drink.%3C/p%3E%3Cp%3EParrish%20worked%20SUPER%20hard%20yesterday%20too.%20He%20and%20his%20Dad%20worked%20in%20the%20yard%20for%20hours.%20They%20pulled%20weeds,%20mowed,%20cleaned,%20AND%20laid%20down%20new%20grass!%20He%20also%20painted%20two%20bookcases%20that%20have%20been%20on%20the%20project%20list%20for%20over%20a%20year!%20So%20I%20wanted%20to%20make%20something%20special%20for%20him%20today.%20No,%20not%20cupcakes.%3C/p%3E%3Cp%3EBeef%20stew!%3C/p%3E%3Cp%3EI%20looked%20over%20a%20few%20different%20recipes%20online,%20and%20ended%20up%20doing%20a%20Gluten%20Hates%20Me%20rendition%20of%20an%20Ina%20Garten%20recipe%20and%20a%20Paula%20Deen%20recipe,%20with%20a%20lot%20of%20reliance%20on%20what%20I%20had%20on%20hand.%3C/p%3E%3Cp%3ETo%20make%20this%20recipe%20at%20home,%20you%E2%80%99ll%20need:%20One%20container%20Gluten%20Free%20Organic%20beef%20stock%205%20cups%20of%20sliced%20veggies-%20I%20used%20button%20mushrooms,%20carrots,%20potatoes,%20celery,%20&%20onion%20One%20pound%20steak%20cut%20into%20cubes-%20I%20used%20an%20All%20Natural,%20Grass%20Fed%20stew%20beef%202%20cups%20red%20wine-%20I%20used%20a%20Merlot%20because%20it%20was%20already%20open%201%20tbsp.%20Italian%20Seasoning-%20a%20mixture%20of%20basil,%20oregano,%20rosemary,%20&%20thyme%20(dried)%202%20tsp.%20Gluten%20Free%20Worcestershire%20sauce%206%20cloves%20garlic%201/2%20cup%20pasta%20sauce%20(You%20could%20use%20sundried%20tomatoes%20or%20sliced%20tomatoes,%20but%20I%20had%20neither)%20Start%20by%20marinating%20the%20beef%20for%20at%20least%202%20hours.%20I%20ended%20up%20marinating%20the%20beef%20for%204%20hours.%20Pour%202%20cups%20of%20red%20wine%20and%20one%20cup%20of%20water%20into%20a%20medium%20bowl.%20Whisk%20to%20combine.%20Peel%203%20garlic%20cloves%20and%20smash.%20Toss%20in%20your%20beef,%20garlic,%20and%20sprinkle%20the%20seasoning%20on%20top,%20give%20it%20a%20quick%20stir,%20and%20cover.%20Refrigerate.%20%20Chop%20your%20veggies%20into%20small%20chunks.%20I%20used%20onion,%20potato,%20mushroom,%20celery,%20and%20carrot.%3C/p%3E%3Cp%3EOnce%20the%20beef%20is%20finished%20marinating,%20lift%20each%20piece%20out%20of%20the%20marinade,%20shake%20off%20the%20excess,%20and%20dredge%20in%20Gluten%20Free%20flour.%20Reserve%20the%20marinade!%20Heat%204%20tbsp.%20extra%20virgin%20olive%20oil%20in%20a%20large%20pan%20over%20medium%20heat.%20Brown%20the%20dredged%20beef%20in%20the%20hot%20pan,%20once%20brown%20set%20aside%20in%20a%20large%20stock%20pot.%20Once%20all%20the%20beef%20is%20browned,%20add%20the%20veggies%20and%202%20tbsp.%20olive%20oil%20to%20the%20pan.%3C/p%3E%3Cp%3ECover%20and%20cook%20for%2010%20minutes%20on%20medium%20heat.%20Stirring%20occasionally.%20While%20it%E2%80%99s%20cooking,%20mince%203%20cloves%20of%20garlic.%20Add%20the%20garlic%20to%20the%20veggies%20and%20cook%20for%20an%20additional%202%20minutes.%20Then%20pour%20onto%20the%20reserved%20beef%20in%20the%20stock%20pot.%3C/p%3E%3Cp%3ETake%20your%20reserved%20marinade%20and%20pour%20it%20into%20your%20hot%20pan.%20Turn%20the%20heat%20up%20and%20with%20a%20wooden%20spoon,%20deglaze%20your%20pan.%20Scrape%20up%20all%20the%20browned%20bit%20from%20the%20bottom%20of%20the%20pan.%20Let%20the%20wine%20marinade%20simmer,%20then%20add%20in%20the%20Gluten%20Free%20beef%20stock%20and%20bring%20to%20a%20boil.%20Add%20this%20bubbling%20beefy%20wine%20to%20your%20stock%20pot.%20Cover%20and%20bring%20to%20a%20boil.%3C/p%3E%3Cp%3EPour%20all%20the%20contents%20of%20your%20stock%20pot%20into%20a%20crock%20pot,%20and%20cook%20for%203%20hours%20on%20high.%3C/p%3E%3Cp%3EMmmm%20tasty!%3C/p%3E%3Cp%3EI%20have%20been%20working%20to%20lower%20my%20blood%20pressure%20over%20the%20past%206%20months,%20and%20I%20went%20to%20the%20doctor%20last%20week%20and%20found%20out%20that%20my%20blood%20pressure%20is%20PERFECT!!%20But%20I%E2%80%99m%20still%20not%20using%20added%20salt%20in%20my%20foods.%20I%20honestly%20don%E2%80%99t%20miss%20it.%20But%20you%20guys%20may%20want%20to%20add%20salt%20to%20this%20recipe.%20Beef%20stock%20is%20a%20bit%20salty%20on%20it%E2%80%99s%20own,%20but%20Alex%20added%20salt.%20Parrish%20said%20he%20meant%20to%20add%20salt,%20but%20forgot.%3C/p%3E%3Cp%3EThe%20beef%20is%20tender!%20You%20can%20cut%20it%20with%20a%20spoon!%20The%20veggies%20are%20perfectly%20cooked,%20and%20the%20wine%20really%20brings%20out%20some%20bold%20flavors.%20I%20love%20the%20mixture%20of%20Italian%20seasoning%20with%20the%20wine.%3C/p%3E%3Cp%3EMax%20is%20interested%E2%80%A6%3C/p%3E%3Cp%3Ein%20being%20a%20taste%20tester.%20Look!%20He%E2%80%99s%20sitting.%20What%20a%20good%20boy.%3C/p%3E%3Cp%3EI%20have%20about%203%20servings%20of%20leftovers.%20You%20could%20add%20in%20more%20beef%20to%20your%20batch,%20and%20adjust%20the%20wine%20and%20seasoning,%20but%20I%20like%20having%20more%20vegetables.%20I%E2%80%99m%20going%20to%20attempt%20to%20freeze%20the%20rest,%20so%20I%E2%80%99ll%20let%20you%20know%20how%20that%20goes.%20I%E2%80%99m%20hoping%20it%20freezes%20well.%20I%20will%20definitely%20make%20this%20again!%3C/p%3E){kind=link}
