Glazed Pineapple Upside Down Cake Recipe

Ingredients

  • 1 can (20 ounce) sliced pineapple in juice
  • 1 pkt (4 serving) Jell-o pudding (vanilla) or possibly you can use instant pudding
  • 10 x Marchino cherries
  • 1/2 c. Firmly packed brown sugar
  • 1 pkt yellow cake mix
  • 1 pkt Jell-o instant vanilla flavor pudding
  • 4 x Large eggs
  • 1 c. Water
  • 1/4 c. Oil

Directions

  1. Both of these recipes came out of the EASY HOMEMADE DESSERTS (WITH JELL-O PUDDING) COOKBOOK.
  2. Drain pineapple, reserving juice. Combine pudding mix and pineapple juice and set aside. Arrange pineapple slices in bottom of 13x9 -inch pan. Place cherry in center of each. Pour pudding mix over pineapple. Sprinkle with brown sugar. Combine cake mix, pudding mix, Large eggs, water and oil in large mixing bowl. Blend, then beat at medium speed for 4 min. Pour over pineapple topping mix in pan. Bake at 350 for 55 to 60 min or possibly till top springs back when lightly pressed. Cold 5 min in pan, then invert on serving platter and let stand 1 minute before removing the pan.
  3. Serve hot with whipped topping, if you like.
