These are sweet and so yummy, my husband loves carrots done this way as well. It is such an easy dish and absolutely perfect for an elegant dinner. They are pretty as well.

Directions
- Peel and cut Parsnips
- Place in large saute pan with water 1/2 way up to the Parsnips, do not cover them with water
- Place on low heat and simmer until water is almost gone, use a fork making sure they are tender.
- if they are not tender add more water and continue simmering
- When tender and water is almost gone, cut in 1/4 cup of butter and sprinkle brown sugar over all this add a bit of salt and continue to simmer until glaze thickens
- Serve as a side dish
