Glazed Eggnog Banana Nut Muffins Recipe
by Brent Garell

I never considered spices to be sexy until I saw John Legend sing about nutmeg on a Stephen Colbert Christmas special.

In his sexy, soulful voice he sang...

"on the 25th, I'm going to cover you with...my nut-meg"

The song was supposed to be about how much he loves nutmeg sprinkled on his eggnog, although you'd never know it listening to the lyrics which happen to be very funny.

If I was singing the song I would have taken it a step further. I would also "cover (my eggnog) with...nut-meg" and then I'd turn both into a flirtatious glaze to be brushed all over the top of my banana-nut muffins! Now I just have to learn how to sing.

The glaze is very easy to make. You simply whisk together 1/2 cup icing sugar with 1 tbsp of eggnog. Since nutmeg has become my new favorite spice, after hearing John Legend's song, I added a couple big pinches of it to the glaze as well.

Once smooth, the glaze is ready to be brushed on top of the muffins followed by another sprinkle of, you guessed it, nutmeg!

I tested one...then ate two more!

I could have easily eaten another. It was tough not to….especially with the sweet eggnog and nutmeg glaze on top!

Thawed frozen bananas make mashing bananas easy!

When bananas hit that overly ripe stage, where they'll stink up anything you carry them in, I put them in my freezer so I can use them later for making muffins and quick breads.

What I like, is when they defrost they get mushy inside making them a cinch to mash!
