  • 1 1/4 c. whole-wheat flour
  • 1 Tbsp. baking pwdr
  • 1/2 tsp salt
  • 2 Tbsp. brown sugar
  • 1 tsp grnd ginger
  • 1/2 tsp cinnamon
  • 1/4 tsp grnd cloves
  • 1/2 c. raisins
  • 1/2 c. minced dates -- minced
  • 1 1/4 c. 100% Bran. cereal
  • 1 1/2 c. skim lowfat milk
  • 1/4 c. molasses
  • 1 x egg
  • 3 Tbsp. vegetable oil vegetable cooking spray

Directions

  1. Preheat oven to 400 F.
  2. Stir together flour, baking pwdr, salt, brown sugar, spices, raisins, and dates in a large mixing bowl. Set aside.
  3. Measure bran cereal into a large measuring c. and combine with lowfat milk. Let stand for 2 min.
  4. In another measuring c., mix molasses, egg, and oil together till blended. Combine with cereal and lowfat milk mix. Pour the wet ingredients into the large mixing bowl with the dry ingredients and stir only till all is combined and moistened.
  5. Spray a muffin tin with cooking spray or possibly line with baking c.. Portion the batter proportionately into c.. Bake for 18-20 min or possibly till tests done.
