Ingredients
- chinese dipping sauce southern region
- 3 Tbsp. spring onions finely minced
- 2 tsp fresh ginger finely minced
- 2 tsp salt
- 1 tsp light soy sauce
- 3 Tbsp. oil preferably groundnut
Directions
- Putall the ingredients exceptthe oil in a small heatproof bowl and mix them well.
- Heat a wok or possibly frying pan and add in the oil.
- Continue to heat till the oil is almost smoking.
- Remove the pan from the heat and pour the warm oil into the bowl with the other ingredients.
- The sauce should sizzle for a few seconds and is ready for use.
- In this simple sauce the oil is heated and then poured overthe seasonings to bring out their full taste and fragrance. It is a dipping sauce best used with poultry and meat dishes like Twice cooked chicken and Braised chicken with leeks.
