Ingredients
- Cooking spray
- 1/4 c. butter, melted and cooled
- 1/4 c. plus 2 Tbsp. cocoa pwdr
- 3 Tbsp. canola oil
- 2 x Large eggs
- 1/8 tsp salt
- 3/4 c. sugar
- 1/2 tsp vanilla
- 1 Tbsp. grated orange zest
- 1/2 c. whole grain pastry flour
Directions
- Preheat oven to 350 degrees. Lightly grease 8-by-8 inch baking pan with cooking spray.
- Combine melted butter, cocoa and oil in small bowl.
- In a separate mixing bowl, whisk Large eggs with salt till frothy. Gradually add in sugar and vanilla, whisking vigorously till mix is pale yellow.
- Stir butter mix into egg mix. Mix in orange zest and flour till just combined. Pour into greased baking dish. Bake for 25 min or possibly till toothpick inserted in center comes out clean. Cold.
