German Style Albacore Recipe

  • 1 1/2 lb skinless Pacific albacore loin cuts or possibly steaks, 3/4" thick
  • 4 x bacon slices
  • 1 1/2 c. coarsely-minced onion
  • 2 c. coarsely-minced cabbage
  • 1 tsp caraway seeds
  • 2 Tbsp. lemon juice
  • 1 tsp grated lemon peel
  • 1/3 c. coarsely-grated carrots plus
  • 2 Tbsp. grated carrots
  • 2 Tbsp. lowfat sour cream
  • 2 Tbsp. low-fat plain yogurt Salt to taste Freshly-grnd balck pepper to taste

Directions

  1. Rinse albacore with cool water; pat dry with paper towels.
  2. In nonstick skillet, saute/fry bacon till crisp. Drain, reserving 1 Tbsp. bacon fat. Crumble bacon; set aside.
  3. In skillet with reserved bacon fat, saute/fry onion, cabbage and caraway seeds till limp but not browned. Remove from heat. Fold in 1/3 c. carrots, bacon, lowfat sour cream, and yogurt.
  4. Arrange albacore in single layer in well-greased baking dish. Season with salt and pepper to taste. Sprinkle with lemon juice and lemon peel. Top with cabbage mix spread to cover proportionately.
  5. Cover with foil and bake at 425 degrees for 13 min. Don't overcook! Albacore should be pink in center when removed from heat. Garnish with 2 Tbsp. grated carrots.
