Ingredients
- German Chocolate Cake - Pots and Pins
- 1 pkg. (4 oz.) Baker's German's Sweet Chocolate
- 1/2 cup water
- 4 eggs, separated 2 cups flour
- 3 tablespoons cocoa powder
- 1 1/2 teaspoons instant coffee, crushed to a powder or 1 teaspoon espresso powder
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup butter, softened
- 2 cups sugar
- 1 teaspoon vanilla
- 1 cup buttermilk
- (Coconut-Pecan Frosting Recipe below)
- 1 can (12 oz.) evaporated milk
- 1 1/2 cup sugar
- 3/4 cup (1 1/2 sticks) butter, softened
- 1 pkg. (7 oz.) coconut, shredded (2 2/3's cup)
- 1 1/2 cups chopped pecans

%20%20We%20did%20go%20to%20the%20Chihuly%20Glass%20and%20Garden%20Museum%20which%20was%20a%20true%20highlight%20if%20there%20ever%20was%20one...%3C/p%3E%3Cp%3EThis%20was%20my%20favorite%20piece%20at%20the%20Chihuly%20Exhibit...it's%20so%20large%20%20it's%20the%20only%20piece%20in%20the%20special%20glass%20conservatory%20built%20to%20hold%20it%20and%20it's%20just%20breathtaking!%20%20We%20walked%20inside%20and%20stared%20up%20at%20this%20mammoth%20assemblage%20of%20glass%20flowers...then%20I%20noticed%20the%20Space%20Needle%20through%20the%20glass%20roof!%20%20Look%20closely,%20you'll%20see%20it,%20too!%20%20When%20I%20win%20the%20lottery%20I'm%20going%20to%20buy%20me%20a%20Chihuly...right%20after%20I%20buy%20ONE,%20one-way%20ticket%20to%20Italy!%3C/p%3E%3Cp%3EThere%20wasn't%20a%20whole%20lot%20of%20cooking%20going%20on%20last%20week%20either...but%20I%20did%20find%20time%20to%20make%20the%20best%20German%20Chocolate%20Cake%20I've%20ever%20tasted...I%20knew%20it%20would%20be%20good...I%20just%20didn't%20expect%20it%20to%20be%20PERFECT!%20%20The%20cake%20itself%20has%20a%20very%20thick%20batter%20and%20is%20rich%20with%20a%20sweet%20chocolate%20flavor,%20thanks%20to...%3C/p%3E%3Cp%3EGerman's%20Sweet%20Chocolate!%20%20Sam%20German%20was%20an%20American%20who%20worked%20for%20Bakers%20Chocolate...Mr.%20German%20came%20up%20with%20the%20sweet%20dark%20chocolate%20recipe%20and%20used%20it%20in%20a%20chocolate%20cake...and%20that's%20why%20there%20is%20an%20apostrophe%20there...it's%20German's%20recipe%20and%20when%20the%20cake%20recipe%20was%20published%20it%20was%20called%20German's%20Chocolate%20Cake!%20%20But%20over%20the%20years%20the%20apostrophe%20was%20removed,%20leading%20people%20to%20think%20this%20was%20a%20German%20cake%20from%20Germany!%20%20Not%20so!%20%20I%20have%20removed%20the%20apostrophe%20even%20though%20I%20used%20German's%20chocolate,%20because%20the%20cake%20recipe%20is%20not%20Mr.%20German's,%20but%20mine!%20%20Confused?%3C/p%3E%3Cp%3ETwo%20cakes%20were%20made%20from%20one%20batch...two%206-inch%20rounds%20and%20two%208-inch%20rounds...I%20made%20the%206-inch%20round%20cake%20for%20a%20friend's%20birthday,%20German%20Chocolate%20Cake%20is%20her%20very%20favorite%20and%20I%20kept%20the%208-inch%20cake%20for%20us.%20%20This%20cake%20has%20a%20very%20moist%20crumb,%20and%20is%20about%20as%20chocolaty%20as%20you%20can%20get...German's%20chocolate%20and%20cocoa%20powder%20and%20instant%20coffee,%20which%20just%20enhances%20the%20chocolate%20taste...no%20kidding...and%20it%20doesn't%20give%20it%20a%20mocha%20flavor%20-%20just%20a%20deeper%20chocolate%20flavor...my%20eyes%20could%20roll%20back%20into%20my%20head%20just%20thinking%20about%20it!%3C/p%3E%3Cp%3EThen%20there's%20the%20frosting...Coconut-Pecan%20-%20it's%20mind-blasting%20good!%20%20The%20frosting%20recipe%20IS%20from%20Mr.%20German's%20original%20recipe,%20it%20can%20be%20found%20on%20the%20inside%20of%20the%20Bakers%20German's%20Sweet%20Chocolate%20Bar%20box.%20%20It%20is%20to-die-for...but%20don't,%20you%20wouldn't%20want%20to%20miss%20it!%3C/p%3E%3Cp%3EMost%20German%20Chocolate%20Cakes%20do%20not%20have%20the%20sides%20frosted%20-%20and%20neither%20did%20the%20original%20one%20-%20just%20the%20thick%20Coconut-Pecan%20frosting%20between%20the%20layers%20and%20on%20top...but%20I%20felt%20the%20cake%20was%20too%20naked,%20so%20I%20made%20a%20quick%20chocolate%20butter-cream%20to%20go%20on%20the%20sides...and%20that's%20what%20put%20this%20cake%20into%20the%20number%20one%20slot.%20%20This%20one%20gets%205%20dangs%20on%20the%20ol'%20Dang%20Meter...it's%20dang,%20dang,%20dang,%20dang,%20dang%20good!%3C/p%3E%3Cp%3EHeat%20oven%20to%20350%20degrees.%20%20Cover%20bottoms%20of%20three%20(9-inch%20round)%20cake%20pans%20with%20parchment%20paper%20and%20then%20grease%20the%20parchment%20paper%20and%20the%20sides%20of%20pans.%20%20(I%20used%20two%208-inch%20round%20cake%20pans%20and%20two%206-inch%20round%20cake%20pans%20only%20because%20I%20needed%20two%20cakes%20from%20one%20recipe,%20normally%20I%20would%20use%20the%20three%209-inch%20pans.)%20%20In%20a%20medium%20microwaveable%20bowl,%20combine%20chocolate%20and%20water%20and%20heat%20in%20microwave%20on%20high%20for%201%20to%201%201/2%20minutes,%20stirring%20every%2030%20seconds,%20until%20chocolate%20is%20almost%20melted,%20remove%20and%20stir%20until%20chocolate%20is%20completely%20melted.%20%20Set%20aside.%3C/p%3E%3Cp%3EIn%20a%20medium%20bowl%20combine%20flour,%20cocoa%20powder,%20instant%20coffee%20(make%20sure%20you've%20crushed%20the%20granules%20to%20a%20powder!)%20baking%20soda%20and%20salt.%20%20Set%20aside.%20%20Beat%20egg%20whites%20in%20the%20bowl%20of%20an%20electric%20mixer%20on%20high%20speed%20until%20stiff%20peaks%20form.%20%20Remove%20egg%20whites%20to%20another%20bowl%20or%20scoop%20out%20onto%20a%20piece%20of%20parchment.%20%20In%20the%20same%20bowl,%20beat%20butter%20and%20sugar%20until%20light%20and%20fluffy.%20%20Add%20egg%20yolks,%20one%20at%20a%20time,%20beating%20well%20after%20each%20addition.%20%20Blend%20in%20melted%20chocolate%20and%20vanilla.%20%20Add%20flour%20mixture%20alternately%20with%20buttermilk,%20beating%20well%20until%20blended%20after%20each%20addition,%20but%20do%20not%20over-beat,%20that's%20what%20makes%20a%20cake%20dry.%3C/p%3E%3Cp%3EAdd%20egg%20whites%20to%20cake%20batter,%20and%20fold%20in,%20by%20hand,%20until%20no%20streaks%20are%20left.%20%20Pour%20into%20prepared%20pans.%20%20Bake%20for%2030%20minutes%20or%20until%20toothpick%20in%20centers%20comes%20out%20clean.%20%20Immediately%20run%20a%20knife%20around%20cakes%20in%20pans.%20Cool%20in%20pans%20for%2015%20minutes;%20remove%20from%20pan%20to%20wire%20rack%20to%20cool%20completely.%20%20Frost%20when%20cakes%20are%20cool.%3C/p%3E%3Cp%3ECoconut-Pecan%20Frosting%20-%20From%20Baker's%20German's%20Sweet%20Chocolate%20Cake%3C/p%3E%3Cp%3E4%20egg%20yolks%3C/p%3E%3Cp%3E1%20can%20(12%20oz.)%20evaporated%20milk%3C/p%3E%3Cp%3E1%201/2%20teaspoons%20vanilla%3C/p%3E%3Cp%3E1%201/2%20cup%20sugar%3C/p%3E%3Cp%3E3/4%20cup%20(1%201/2%20sticks)%20butter,%20softened%3C/p%3E%3Cp%3E1%20pkg.%20(7%20oz.)%20coconut,%20shredded%20(2%202/3's%20cup)%3C/p%3E%3Cp%3E1%201/2%20cups%20chopped%20pecans%3C/p%3E%3Cp%3EBeat%20egg%20yolks,%20milk%20and%20vanilla%20in%20large%20saucepan%20with%20whisk%20until%20well%20blended.%20%20Add%20sugar%20and%20butter;%20cook%20on%20medium-heat%2012%20minutes%20or%20until%20thickened%20and%20golden%20brown,%20stirring%20constantly.%20%20Remove%20from%20heat.%20%20Add%20coconut%20and%20nuts;%20mix%20well.%20%20Cool.%20%20Frost%20cake%20between%20layers%20and%20on%20top.%3C/p%3E%3Cp%3EThe%20recipe%20for%20Chocolate%20Butter-cream%20will%20be%20posted%20soon...I%20figure%20I've%20used%20up%20all%20the%20ink%20on%20this%20post%20already!%3C/p%3E){kind=link}
