Ingredients

  • 1 pkt Yeast
  • 1 Tbsp. White sugar
  • 12 c. Bread flour
  • 12 c. Medium rye flour
  • 2 c. Whole wheat flour
  • 1/2 c. Unprocessed bran flakes
  • 1 Tbsp. Caraway seeds
  • 1 tsp Salt
  • 1 tsp Instant coffee pwdr
  • 1/4 tsp Fennel seeds
  • 1 c. Water
  • 2 Tbsp. Water
  • 2 Tbsp. Molasses
  • 2 Tbsp. Cider vinegar
  • 1/2 ounce Unsweetened chocolate

Directions

  1. (I would cut back on which a bit) Cold the mix to 105-115 degrees and add in to dry ingredients. I suspect the exact ingredients do not really matter all which much. As long as the flour-to-liquid proportions are such as to make a dough of good consistency, the result will probably be highly edible.
